Crunchy Veggie Wrap

Slice up:

  • some red cabbage
  • 1 carrot
  • 1 red bell pepper
  • 1 cuccumber (take out the inside seeds)
  • 1 tomato

Then assemble the wrap by layering the veggies:

  1. hummus
  2. tomato
  3. red bell peppers
  4. cuccumbers
  5. carrots
  6. red cabbage
  7. alfalfa sprouts
  8. crumbled feta cheese (you can use any other kind of cheese)
  9. salt and pepper
  10. tabasco sauce (optional)
  11. fresh spinach leaves

Wrap it up & you’re done!

So good you won’t even realize how healthy it is. Great for school, college, work, on the go. Prepare the ingredients a day ahead to make your mornings a breeze.

I just finished up summer school a couple of days ago. I admittedly stress ate, bleh. I checked my wight this morning, and the damage isn’t too bad. However, I best not get lax about this. Also, as an added motivation, I read that I should strengthen my butt to help out my runner’s knee, so I’ll be starting to implement some butt exercises. Cheers to a taunt buttock and painless runs!
